주미당은 전통적으로 주관적 경험에 의존해온 향미 산업에서 후각과 미각 데이터를 구조화하고, 자체 알고리즘으로 분석해 실제 제조 단계에서 활용 가능한 배합 레시피를 생성하는 AI 기술을 개발하고 있다. 사용자의 목적과 맥락을 언어 기반으로 입력받아 새로운 향미 구조를 설계하는 방식이 핵심이다.
김동완 주미당 대표는 “주미당은 감각을 대체하는 AI가 아니라 감각을 산업적으로 확장할 수 있는 기술을 개발하고 있다”며, “이번 투자를 계기로 기술의 재현성과 확장성을 강화해 글로벌 시장에서 통용되는 향미 생성 기술 기준을 만들겠다”고 말했다.
